Breakfast potato

Hubby and I had a lovely breakfast potato side dish with our breakfast on our trip to New York  a few years ago. I tried to recreate this dish, and have a few successful attempts. I made it for breakfast this morning.


  • 2 large potatoes, washed and quartered (leave the skin on)
  • 2 tbsp paprika
  • 2 shallots, finely sliced
  • dry italian seasoning/oregano
  • olive oil
  • 1 tbsp butter
  • fresh black pepper
  • salt

Method (cooking time 5 minutes)

  1. Boil the potatoes until soft, drain using a colander and leave aside
  2. Heat 2 tbsp olive oil and butter in a pan and saute the shallots
  3. Mix in the potatoes and flatten using a spatula
  4. Add in the paprika, salt, italian seasoning/oregano and mix well
  5. Season with a generous amount of fresh black cracked pepper
  6. Give the potatoes and good stir and remove from the heat
