Homemade sushi

We have been eating very rich food in the last few weeks on account of early Christmas catch-ups with friends and family. I decided to make sushi for dinner last night, and it went down quite a treat so we had it again tonight.

Tuna sushi

  • a can of John West tuna in brine, drained
  • half a shallot, finely chopped
  • low fat mayo

Cucumber and roasted yellow pepper sushi

  • 1/4 yellow peppers, sliced into long strips – roast in the oven for 10 minutes

Sushi ingredients

  • nori sheets
  • 250g sushi rice
  • 340 ml water
  • 1/2 tbsp japanese rice vinegar
  • pickled ginger
  • soy sauce
  • sushi mat
  • salt to taste

Method

  1. Soak rice in 340ml water for 20 minutes.  Cook for 15 minutes. Once rice is cooked, loosen it up with a fork and leave to cool for 20 minutes. Mix with japanese vinegar and salt
  2. Assemble first sushi with tuna mix, and the next with the cucumber/roasted yellow pepper.
  3. Serve with pickled ginger and soy sauce
