Chilli con carne

I woke up this morning and checked the time… it was 8.45am. How did I manage to sleep in so late? Thankfully it was Saturday morning. We set off for the shops to buy a bookcase and a wardrobe, collect the curtains and buy some beddings. Before I knew it, it was 1.30pm and lunchtime. It was raining rather heavily so I suggested to hubby that we have lunch at home. I had mince lamb in the fridge and decided to whip up chilli con carne which I thought would be perfect for a cold, rainy day.


  • one pack chilli con carne mix
  • 250g mince lamb
  • 2 shallots, finely sliced
  • 2 cloves of garlic, ginely chopped
  • 3 tbsp ketchup
  • salt and pepper to taste
  • 1/2 cube of lamb stock mix
  • 1 can kidney beans


  1. Heat some olive oil in a heavy based pan and brown the mince meat for 5 minutes
  2. Drain the liquid from the mince
  3. Set the mince aside in a bowl
  4. Heat more oil in the pan
  5. Brown the shallots for a minute followed by the garlic for 30 seconds
  6. Add in the mince meat and kidney beans
  7. Add the chilli mix and ketchup and give the mince a good stir
  8. Crumble the stock into the chilli, add half a cup of water
  9. Put the lid on and leave to cook for 20 minutes on a low heat
  10. Season with salt and pepper

I had my chilli with spaghetti, while hubby had his with rice.
