As much as I love having time off work, I tend to find it difficult to settling back in after holidays. Work was very busy last week and we ended up eating out a lot, and the cross-trainer is doubling as a clothes-horse at the moment. As it is the start of a brand new month, there is no time like the present to kick off the week with a meal plan, and hopefully get some mileage out of the cross-trainer.
- Tuesday – grilled halumi cheese and asparagus salad, and roast chicken from Waitrose
- Wednesday – sweet and sour fish served with mixed vegetables
- Thursday – leftover sweet and sour fish
- Friday – Chicken in mustard and breadcrumbs served with store-bought mash
We are having friends over for dinner on Saturday night, and I am feeling a bit nervous about cooking for them as A is an accomplished cook and runs cooking workshops through Wholefood Harmony. I will certainly have my work cut out for me!
