Caramel sea bass

I have no photos to post here unfortunately. I checked my camera only after plating up, to find that it was completely without fuel.  Use your imagination to picture a dish consisting of lightly fried fish served with a caramelised sauce of dark soy, brown sugar, fish sauce, chopped shallots and garlic.

The original recipe as per Bill Granger’s Everyday calls for salmon, but I’m not a fan, so I used sea bass instead.
