Roast potatoes

This recipe for roast potatoes works well for me without fail. You’ll need 1/4 cup olive oil, salt and of course potatoes


  • Peel and quarter potatoes
  • Fill up a pot with water and 1/4 tsp salt and leave to boil
  • Par-boil the potatoes for 7 minutes and drain.  Leave to cool for 10 minutes. Use a fork to scrap the surface of the potatoes on all sides
  • Pre-heat the oven to 220 degrees. Pour the oil onto a baking tray and leave it in the oven for 15 minutes
  • Very carefully place the potatoes into the hot oil and leave to cook for 30 minutes
  • Remove the baking tray from the oven and gently turn the potatoes onto uncooked sides
  • Return to the oven and leave to cook for 25 minutes
  • Transfer the potatoes to a kitchen paper to drain any excess oil
