Honey chicken and broccoli stir fry

I wanted a light stir fry for lunch following our big meaty meal last night.  I bought a chicken breast from our local butcher, and some broccoli from Sainsbury’s, and thought they would go well together. I marinated the chicken for 2 hours, and flash fried them to retain their juicy-ness (as chicken breast tend to dry out).


  • 1 chicken breast, diced, marinated in 1 tsp minced garlic, 1 tsp minced ginger, a dash of white pepper, 1 tsp soy sauce, 1 tsp oyster sauce, 2 tbsp honey, 1 tsp cornflour
  • a bunch of broccoli, chopped
  • 1 inch ginger, sliced
  • 1 shallot, sliced
  • 2 spring onions, chopped
  • 1 tbsp chinese rice wine
  • sauce: 2 tbsp honey. 1 tbsp lemon juice, 1 tsp soy sauce, 3 tbsp water
  • 1 tsp cornflour mixed with 2 tbsp water
  • sesame seed oil
  • salt and white pepper to taste
  • sunflower oil


  1. Heat some oil in a wok. Fry the chicken in batches, for a minute on each side. Remove to a plate
  2. Fry the onions, shallots and spring onions for 1 minute
  3. Toss in the broccoli, and stir well for 2 minutes
  4. Mix in the sauce and put the lid on for 2 minutes
  5. Season with salt and pepper
  6. Add the cooked chicken, toss well, and add the rice wine
  7. Stir well for 2 minutes and pour in the cornflour mix (to thicken the sauce)
  8. Leave to cook for 30 seconds, add a dash of sesame seed oil and remove from the heat
