Rather than serving plain boiled baby potatoes with the coq au vin I made earlier, I decided to jazz it up a bit with a beurre blanc sauce.
Note: You could boil the potatoes ahead of time. Before serving, warm them up in the microwave while you make the beurre blanc. Add the potatoes to the beurre blanc and mix well. Beurre blanc will split if not served immediately. To rescue the sauce, put it in a pan over small heat and whisk in some cold butter until you get a thick sauce.
