Meal plan week commencing 14 March 2011

We hardly had vegetables last week.  Hubby and I went for a lovely Thai meal for dinner earlier, and we ordered a plate of bok choy with garlic and oyster sauce to share.  It was divine.  We have made a pact that if this week leaves us with very little cooking time and if we have to resort to eating out, we’ll make sure to order a side of vegetables.

  • Monday – grilled lamb steaks (salmon for me), sautéed broccoli
  • Tuesday – dhal, fried chicken drumsticks
  • Wednesday – chickpea burger, rocket, avocado and tomato salad
  • Thursday – butternut squash, courgette and aubergine red curry
  • Friday – leftover curry
