Meal plan week commencing 21 March

10 days to the end of the month, and also to end of the slog every bean counter endures for ‘year end’.  The cross trainer and swiss ball have both taken a back seat for the past week, as I haven’t been able to commit time to anything other than work. Hubby has been amazingly supportive, but I secretly thinks he enjoys the extra peace and quiet before I come home.

I have some chicken and butternut squash to use up from the weekend, but it is anyone’s guess whether the kitchen will get to see any action at all this week.

  • Monday – chicken curry
  • Tuesday – butternut squash risotto
  • Wednesday – spaghetti con pomodoro e basilico
  • Thursday – kung po chicken, green beans and garlic
  • Friday – probably a take out!
