We’ve both been off work for over 15 days, however with weekends and bank holidays, it really only has been 7 working days. Neither of us are looking forward to getting back to work, but it has to be done and we have to also ease back into our weekly meal plan routine. I’m sure it won’t seem all that bad in a few days’ time. One can only hope.
- Monday – Hainanese chicken rice
- Tuesday – Grilled tuna, Jersey royals, cannelini bean and green bean salad
- Wednesday – Butternut squash and oyster mushroom risotto
- Thursday – Parsnip soup, soda bread
- Friday – Waitrose roast chicken, couscous salad
