Kari kapitan

I bought Gordon Ramsay’s Great Escape South East Asia cookbook recently, and the first recipe I tried out was Kari Kapitan.   The dish is a chicken curry, quite similar in flavour to the rendang I normally make, but has more gravy and is full-bodied.   I served added some new potatoes to the curry to bulk it up, and served it with coconut rice and a mixed vegetable stir-fry.  The curry went down a treat.
