Provencal soup (Soupe au pistou)

One of my favourite cookbooks is Barefoot in Paris by Ina Garten.  I have been inspired to cook many delicious meals from her lovely collection of French recipes.  For dinner earlier, I made us Provencal Soup, or Soupe au pistou.  This soup was a winner – if you ever have doubts whether vegetarian dishes can deliver taste, this is definitely one to try.   I added some curly kale from my veggie garden, which made this soup even more special as it was my first harvest of kale.

A big thank you to Hubby for making the pistou – the star of the show.
