Nicoise salad

I have been having Nicoise Salad for lunch regularly, and wanted to make my own version at home.  We were quite busy tidying up the house ahead of my FIL’s visit, and so Nicoise Salad was perfect for a quick and light dinner.  This is my take on it.

Ingredients:

  • 200g yellow fin tuna steak
  • 3 new potatoes
  • 150g spinach leaves
  • 150g rocket leaves
  • 100g mixed lettuce leaves
  • 100g trimmed french beans
  • 2 hard-boiled eggs, peeled and halved
  • 50g haricot beans (I used canned), drained
  • 1 tsp olive oil
  • 2 – 3 tbsp pistou
  • a drizzle of balsamic vinegar
  • salt and pepper to taste

Method

  1. Heat a small pot of water and once boiled, cook the eggs for 10 minutes.  Remove the eggs to a bowl of tepid water and peel once eggs are cool
  2. Heat a pot of water.  Once boiled, gently toss in the potatoes and cook for 15 minutes until cooked.  Remove the potatoes to a salad bowl using a slotted spoon
  3. Use the same water and blanch the spinach for a minute and remove to the salad boil using a slotted spoon
  4. Blanch the french beans for a minute and remove to the salad boil
  5. Finally, blanch the haricot beans for a minute and transfer to the salad boil
  6. Drizzle some balsamic vinegar onto the vegetables and season with salt and pepper
  7. Meanwhile, coat the tuna with oil and season with salt and pepper
  8. Heat a gridle pan and cook the tuna for 3 minutes on either side
  9. Remove tuna from the pan and leave to rest on a plate for a minute
  10. Place some salad on a serving plate along with the boiled eggs
  11. Slice the tuna into 1.5cm thickness and serve on top of the salad
  12. Drizzle some pistou on top of the tuna and serve
