Ginger and lemon caramalised chicken

I flicked through Gordon Ramsay’s Great Escape South East Asia cookbook which I purchased a few weeks ago – there were some delicious recipes to try, but I was after something quick and easy.  I liked the sound of his ginger and orange caramalised chicken wings, but I had neither oranges nor chicken wings.  I substituted the orange with lemon, and chicken wings with chicken thighs and drumsticks.  This is a delicious meal – the weather was decent at lunchtime, and we had the chicken, served with green beans stir-fry, sambal telur and basmati rice, on the decking.  It starting bucketing just as I was clearing up the dishes!
