Donna Hay’s apple slice

I had some apples in the fruit bowl which I was keen to use up before they went off – bored with the usual cakes and tarts, I browsed recipes online for some inspiration.  I found a Donna Hay recipe for apple slice, and knew right away that this would go down a treat in my household.   The recipe has a number of processes, but is worth the effort.  Here is the recipe for ease of reference, modified very slightly.


A) Apple filling

  • 5 apples ( I think mine were Gala), peeled and chopped
  • 10g butter
  • 1/2 tsp ground cinnamon

B) Apple crumble

  • 185g plain flour
  • 1 tsp baking powder
  • 125g butter, chilled a diced
  • 165g caster sugar

C) Apple slice

  • 100g butter, softened
  • 110g caster sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 160g plain flour
  • 1 tsp baking powder


  1. To make the filling, place all the ingredients in a pot and leave to cook for 10 minutes until soft (I used a potato masher to mash up the soft apples).  Leave to cool
  2. To make the crumble, mix all the ingredients in a large bowl with your fingers until the texture is similar to breadcrumbs
  3. To make the apple slice, beat the butter and sugar with an electric beater until pale and creamy (say 5 minutes)
  4. Add the egg and vanilla and continue beating for 2 minutes until combined
  5. Fold in the plain flour and baking powder
  6. Pre-heat the oven at 160 degrees celsius
  7. Grease and line a 20cm x 20cm x 4 cm baking tin (which is what I had) with baking paper (leave extra for both ends of the paper so that you can lift out the whole apple slice once cooked)
  8. Pour the apple slice batter into the lined tin
  9. Pour the apple filling on top of the batter, covering the edges
  10. Scatter the cumble topping onto the filling
  11. Bake for 40 minutes until topping is golden
  12. Serve on its own or with cream 

This recipe is a winner.  The apple slice was not too sweet, the base and filling were moist, with the crumble providing the crunchy contrast.  A big thumbs up from Hubby.
