While Sunday is a day of rest, I do put in an extra effort in cooking our dinner. I had ordered diced lamb on Ocado which was delivered on Saturday night. I flicked through Gordon Ramsay’s Great Escape Southeast Asia cookbook, and decided on Massaman curry. I’ve only ever bought ready-made Massaman paste and was keen to make my own. It is a time-consuming recipe – or maybe I was tired after baking the apple slice. I was glad I stuck it out and made the curry, as once again, this recipe is a winner. I am even thinking of making a big jar of Massaman curry paste so that I can use it for midweek dinners.
