Tangerine and fennel salad

I served a tangerine and fennel salad as a side dish for our dinner guests last night, which was inspired by this recipe.

Ingredients:

  • a packet of rocket leaves
  • 1 fennel bulb, sliced thinly
  • 5 radish, thinly sliced
  • 4 tangerines, peeled and segmented
  • dressing: 1 1/2 tbsp olive oil + 1 tbsp red wine vinegar +2 tsp honey + 1 tsp grated ginger

Method

  1. Layer a salad dish with the rocket, followed by the fennel
  2. Scatter the sliced radish and tangerine segments
  3. Mix the dressing and pour over the salad just before serving
