I found a quick and easy recipe for barbecue sauce which I made to accompany the pulled lamb I served up for lunch today. If you’re short for time, then this is a good recipe to have up your sleeves.
I modified the recipe slightly as I was only serving it for the two of us:Ingredients: (makes 1/2 cup)
- 1 large clove of garlic, peeled and minced
- 1 tbsp sunflower oil
- 1/2 cup ketchup
- 1/4 cup water
- 2 tbsp dark brown sugar
- 2 tbsp sherry vinegar
- 1 tsp chilli powder
- 1 tsp paprika
- Heat oil in a saucepan
- Fry the garlic for 30 seconds
- Add the rest of the ingredients to the pan
- Leave to cook over a low heat for 10 minutes
- Sauce is ready to serve!
