Homemade onion relish

I made onion relish as a condiment for the pulled lamb I made earlier.  I had a rough idea as to how to cook it and checked google as well.  This is a quick and easy recipe for onion relish – if there’s any leftover, store it in the fridge up to about 5 days.

Ingredients (makes about a cup)

  • 3 red onions (I only had 1 red onion and used 2 yellow onions)
  • 2 tbsp sunflower oil
  • 3 tbsp dark brown sugar
  • 3 tbsp sherry vinegar
  • 1 tbsp balsamic vinegar
  • 2 bay leaves
  • 4 black peppercorns
  • a pinch of salt
  • a pinch of grated nutmeg

  1. Heat oil in a pan
  2. Over a low heat, cook the onions until they are translucent (about 10 minutes)
  3. Add in all the ingredients and leave to cook for 1.5 hours over very low heat
  4. Stir occasionally and make sure the onions don’t stick to the bottom of a pan
  5. Keep in a clean bowl covered with cling film or a sterilised jar for up to 5 days in the fridge
