Quick vegetarian chili

Hubby took over dinner duty tonight – a task I struggled to relinquish.   I was consumed by panic at one point and  shouted ‘wash the courgettes before you chop them’ to which he politely asked that I stop bossing him around.   Hubby, you did a fine job with the vegetarian chili tonight.

Quick mid-week vegetarian chili:

Onion – sliced, 1 tbsp oil, courgettes, carrots, chestnut mushrooms – all diced up, a can of kidney beans – drained, a packet of chili mix, 150ml water, 2 tbsp ketchup. 1 tbsp chilli sauce

Fry the onions in oil for a minute, then bung everything into the pot. Cook for 25 minutes.  Serve with couscous.
