Freezing food for post-baby weeks

A big to-do on my pre-baby delivery list is to stock up the freezer with home-cooked food.   Nipper is due in a month’s time which should theoretically leave me with some time to cook and put my feet up especially since I’ll be starting maternity leave at the end of this week. 

I’ve come up with a list of simple dishes, mostly vegetarian as am not a fan of freezing meat.

  • chili con carne
  • vegetarian fajita filling
  • corn chowder
  • ribollita
  • dhal
  • salmon fishcakes
  • butternut squash soup

I’ve plenty of chicken broth to make us chicken noodle soup. 

If anyone has any good suggestions for freezing meals, please drop me a comment.
