Salmon and avocado burger

Ever since Hubby went back to work after baby-leave, I’ve been in charge of cooking.   Since we are still trying to get into some form of routine/pattern with Sydney Bear, every day is different.   Some days, I may have an hour free in the mornings to quickly whip up lunch/dinner.  Other times, I may have to wait for Hubby’s return from work to mind baby whilst I cook.

Sydney Bear was happily dozing in her Papa’s arms this morning when I set upon to make us Salmon and Avocado Burger for lunch.  This is a quick and easy recipe to make, one I hope to try again soon.

Ingredients: (makes 2 burgers)

  • 1 can of salmon, drained
  • 1 egg, beaten
  • a handful of chopped parsley and dill
  • zest of a lemon
  • 1/2 yellow onion, sautéed
  • 1/2 cup breadcrumbs
  • salt and freshly ground black pepper
  • 1/2 avocado, diced
  •  sunflower oil for frying

Method:

  1. Pre-heat oven at 200 degrees
  2. Line a baking tray with foil
  3. In a bowl, mix the salmon, egg, herbs, lemon zest, sautéed onion and breadcrumbs
  4. Season with salt and pepper
  5. Add the diced avocado to the mixture and gently shape into burger patties
  6. Add 1 to 2 tbsp oil in a wok/frying pan
  7. Fry the burger patties for 3 minutes on either side
  8. Remove the patties from the stove and place them on the foil-lined baking tray
  9. Place the baking tray in the oven and leave the patties to cook for 15 minutes
  10. Remove the burgers from the oven and serve with fresh bread rolls, lettuce, tomatoes and some chilli sauce
