A little bit late posting this week’s meal plan, but better late than never. Christmas was a time for indulgence and it seems apt to start the new year on a healthy note and also plan budget-friendly meals.

- Thursday – dhall and salmon fishcakes
- Friday – lemon chicken, broccoli stir fry
- Saturday – vegetarian fajita
- Sunday – grilled lamb steaks and peppers, couscous
