Meal plan week commencing 7th Jan

We stuck to last week’s meal plan almost to the T, except for Saturday, which turned out to be a very busy day so I defrosted my last frozen chili con carne (made during maternity leave) for our dinner.   Here is this week’s meal plan. 

  • Monday – veggie pasta
  • Tuesday – moroccan chicken thighs and chickpeas
  • Wednesday –  tofu noodle stir-fry
  • Thursday – baked mushroom risotto
  • Friday – dhal
  • Saturday – teriyaki salmon
  • Sunday – roast chicken
