We stuck to last week’s meal plan almost to the T, except for Saturday, which turned out to be a very busy day so I defrosted my last frozen chili con carne (made during maternity leave) for our dinner. Here is this week’s meal plan.
- Monday – veggie pasta
- Tuesday – moroccan chicken thighs and chickpeas
- Wednesday – tofu noodle stir-fry
- Thursday – baked mushroom risotto
- Friday – dhal
- Saturday – teriyaki salmon
- Sunday – roast chicken
