Mary Berry’s carrot cake

..except it tasted very much like a banana cake with the addition of 2 ripe bananas in the batter.   Whilst it was a delicious, moist cake,  I really wanted a carrot cake.

I used a low fat cream cheese frosting recipe (120g Philadelphia cream cheese/120g icing sugar/2 tsp lemon juice) instead.   I am going to attempt the recipe again this weekend for cupcakes with more grated carrots and will omit the bananas.
