Daily dinners in photos – Monday

We were expecting company last night to go through some paperwork.  Come 2pm, I was tempted to join the bear in her afternoon nap! However, common sense took over and I cooked us dinner.

I was going to make squash risotto as per the meal plan, however I was conscious that there was no protein in the dish.  I scrapped the idea, and whipped up a vegetarian chili using the squash, onions, garlic, a can of black beans and courgettes.  The seasoning was ground cumin, paprika, fresh thyme, salt and pepper.   We had the chili with tortilla wraps, Dorito chips and a side of chopped avocado (not pictured).  It was delicious, with plenty leftover for lunch today.
