Meal planning now requires a bit more thought rather than something I can just pull together on a Sunday night. The fridge needs to be stocked up by Saturday and Sunday evening entails bulk cooking and freezing.
- Meat-less Monday – squash and porcini mushroom risotto
- Tuesday – ratatouille, grilled salmon
- Wednesday – clam linguine
- Thursday – leftovers
- Friday – chicken in spicy tomato sauce, rice
