Quinoa burger with asian salad and satay sauce

I knew as soon as I saw the lovely Thai Veggie Burgers on Annie’s Eats that they had to feature in our weekly meal plan.  I made them for lunch today (instead of dinner last night) and they went down a treat.  Whilst I served them with burger buns,  I think the burger and salad are the stars of the dish.

I modified the recipe slightly, but credit to Annie’s Eats for the original recipe.

Ingredients:  (serves 2)

a) Burger

  • 1 shallot, finely chopped
  • 1/2 red pepper, de-seeded and diced
  • 1/4 cup oats (I used Flahavans)
  • 1/2 cup polenta
  • 1 small clove of garlic, peeled
  • 1 inch ginger, peeled and grated
  • 1 egg
  • 1 tsp paprika
  • 1 cup cooked quinoa
  • salt and pepper to taste
  • Fry lite

b) Salad

  • 4 – 6 leaves of chinese cabbage, finely sliced
  • 1/2 medium carrot, peeled and grated
  • a good handful of coriander, chopped
  • a good squeeze of lime

c) Satay sauce

  • 2 heaped tbsp of peanut butter
  • 1 tbsp kicap manis (dark soy)
  • 1 tsp honey
  • 2 – 3 tbsp warm water

Method:

  1. Pre-heat the oven at 200 degrees
  2. To make the burger, first spray some Fry Lite on a frying pan and sauté the shallots and pepper for 2 to 3 minutes until soft and fragrant.  Remove from the heat and leave to cool
  3. In a blender, add the oats, polenta, garlic, ginger, paprika and egg and blender until smooth
  4. Tip the blended ingredients into a medium bowl, add the cooked quinoa, shallots and pepper
  5. Mix well with a spoon and season with salt and pepper.  Split the mixture into two halves
  6. Wet your hands and shape the quinoa mixture (one half) into a patty and place onto a plate.  Repeat with the next half.
  7. Heat a frying pan (oven-proof) and spray with Fry Lite.  Place the two burger patties on the pan and leave to cook for 3 to 4 minutes on either side until golden.  Place the patties on their side for a minute, turning them around until all sides are golden
  8. Transfer the frying pan into the oven for 5 minutes until cooked through
  9. Remove from the oven
  10. For the salad, mix all the ingredients together in a bowl and give it a toss
  11. For the sauce, mix all the ingredients in a small bowl and whisk until combined
  12. Serve the burgers with burger buns, salad and satay sauce
